Rose absolute or rose otto?

Otto is steam-distilled and carries a crystalline, slightly waxy, more transparent rose with a distinctive cool top note. Absolute is solvent-extracted, deeper, jammier and much more tenacious. Otto also contains the paraffins that cause it to solidify below about 20 °C, which absolute does not. Neither is a substitute for the other.

Rose absolute extracted from Rosa centifolia grown in the Moroccan valleys. Solvent extraction recovers the heavier phenylethyl-alcohol-rich fraction that steam distillation largely loses to the distillation water, which is why absolute and otto smell so different despite coming from the same flower.

The absolute is deeper, sweeter, more honeyed and considerably more tenacious than otto, with a spicy-green edge and a jammy richness. Dark red-orange and viscous.

Harvest runs a few weeks in spring. Flowers are picked before dawn and extracted the same day.
